Apple and Chestnut Stuffing

Serves: 6 servings, about 1½ cups each
Ingredients:
Nonstick cooking spray
6 cups whole-grain bread cubes
1 Tbsp. olive oil
1 medium onion, chopped
2 medium celery stalks, chopped
3 cups coarsely chopped apples (about 3 medium apples…Granny Smith or Honeycrisp apples are great for baking)
¼ cup finely chopped fresh sage (or thyme)
½ tsp. sea salt
½ tsp. ground black pepper
2 cups low-sodium vegetable or chicken broth
¾ cup chopped Italian chestnuts, preshelled and roasted (approx. 4 oz.)
Instructions:
Preheat oven to 375°F. Lightly coat a 3-quart baking dish with spray.
Spread bread on a baking sheet and bake for 15 minutes, rotating halfway through. Set aside.
Heat oil in a skillet over medium-high heat. Sauté onion and celery for 5–6 minutes until onion is translucent.
Add apples and cook for 3–4 minutes until tender-crisp.
Mix onion mixture, bread, sage, salt, pepper, broth, and chestnuts in a large bowl.
Transfer stuffing to the baking dish. Bake for 30–35 minutes until cooked through.
