Apple and Chestnut Stuffing

Serves: 6 servings, about 1½ cups each

Ingredients:

  • Nonstick cooking spray

  • 6 cups whole-grain bread cubes

  • 1 Tbsp. olive oil

  • 1 medium onion, chopped

  • 2 medium celery stalks, chopped

  • 3 cups coarsely chopped apples (about 3 medium apples…Granny Smith or Honeycrisp apples are great for baking)

  • ¼ cup finely chopped fresh sage (or thyme)

  • ½ tsp. sea salt

  • ½ tsp. ground black pepper

  • 2 cups low-sodium vegetable or chicken broth

  • ¾ cup chopped Italian chestnuts, preshelled and roasted (approx. 4 oz.)

Instructions:

  • Preheat oven to 375°F. Lightly coat a 3-quart baking dish with spray.

  • Spread bread on a baking sheet and bake for 15 minutes, rotating halfway through. Set aside.

  • Heat oil in a skillet over medium-high heat. Sauté onion and celery for 5–6 minutes until onion is translucent.

  • Add apples and cook for 3–4 minutes until tender-crisp.

  • Mix onion mixture, bread, sage, salt, pepper, broth, and chestnuts in a large bowl.

  • Transfer stuffing to the baking dish. Bake for 30–35 minutes until cooked through.
